Time to try this 'ephemeral wine' known as 'bourru'

Slightly sparkling, sweet with a hint of acid, this ephemeral wine is ready in our shop for those who are curious, lovers, passionately fond, epicure and connoisseur.
For a few days, at the most a few weeks, it will enliven the palate and then vanish until next September. As an accompaniment to roast chestnuts, mushrooms or as an aperitif or with a meal the 'bourru' is grape juice in the process of fermentation.
No longer a grape and not yet wine, it is this fleeting taste of just a few hours, a moment to grasp and share.
‘Bourru, is a must of grapes in the process of fermentation. It is no longer grape juice but is not yet wine.
It is the ‘sparkling phase’ in the making of the wine. The yeasts, naturally present in the grape, transform the sugar in the grape juice into alcohol whilst liberating carbonic gas: this is the alcoholic fermentation process. This drink, delicious yet fleeting, can be enjoyed throughout the period of the wine harvest and for some time afterwards.
The white is the most popular, sometimes rosé is enjoyed though rarely the red, this due only to a lack of habit. ‘Bourru’ is a wonderful accompaniment to chestnuts roasted on a log fire or chestnuts simply boiled in water flavoured with fig leaves and anise. Take care as this drink does not like to be completely sealed, if you do not let the gas escape by piercing a hole in the cork you might be surprised to have an explosion of fresh grape flavours equal to any firework display.
Whether one prefers it sweet and sparkling (from the midst of the process of fermentation) or with more alcohol and still (from the end of the fermentation process) there is something for all tastes. Just try it and you will surely become a fan.
