Yeast is the reason why grape juice turns into wine. In the process of vinification, this yeast, which is naturally present on the skin of the seeds, changes the sugar of the grapes into alcohol and develops the aromas of the wine.
In the same manner as the baker adds yeast to the flour in order to make bread, some oenologists might also add yeast to the vat to ensure that all the sugar is transformed.
Oh cruel nature, the yeast is killed by the alcohol which it has created!
It is the yeast which is responsible for the distinctive character of Bordeaux wine, however, you will not find the slightest trace of the yeast in the glass as it is eliminated by filtration before the wine is bottled.
