WHAT IS A ROSÉ WINE?

The rosé wines of the Sauveterre Wine Cooperative and more generally of the guaranteed Bordeaux vintages (AOC) are processed exclusively from red grapes. To create the wine ‘Cellier de la Bastide' our cellar master, Pascal Mondin, chose to bring together a Cabernet Franc for its aromatic qualities and vivacity and Merlot with its very special bouquet. he plots are already chosen in the springtime and are specifically cultivated to achieve their maximum potential. The grapes are harvested when they are hardly ripe in order to preserve their aromas and a good acidity, which is essential for the freshness and liveliness of the wine.
The grapes are then put into vats. The skins containing the red colouring are in contact with the juice which is lightly coloured within a few hours. Then the rosé juice is drained off and the vats are ‘bled', thus the name then given to the wine is ‘rosé of bleeding'.
The subsequent wine-making process is that of a white wine, which means that the juice is kept at a low temperature and airtight in order to preserve all of the aromas. Just some weeks after the harvesting, the wine already shows its potential and can be drunk the following year.
The rosé wine of the ‘Cellier de la Bastide' is by its definition a wine of conviviality, to be drunk chilled on any occasion and to be appreciated for its exceptional bouquet and freshness.
