The wines which generally preserve well tend to be those which are full, tannic and having a good acidity. Consequently, a Bordeaux red ‘Sieur Gaillard' usually keeps better and longer than a Bordeaux red Château Lacousse, which is lighter and fruitier. The Bordeaux red wines of the Sauveterre cooperative - kept in good conditions - should be drunk 5 to 10 years after the year of harvesting, according to the type of wine. To keep a wine longer than this time, one should be sure of having perfect conditions of conservation.
In the case of the white wines of the cooperative we recommend that you enjoy them the year after the harvest. From the first months the flavours of the Sauvignon are at their height and will not improve with time. With the mellow white wines, however, such as ‘Cuvée Athalésie' there is no rush. The aromas of dried apricots and crystallised fruits will, with time, combine into a bouquet of flavours. The pale yellow will gradually become a golden colour. Up to 17/18°c you can expect the best after many years. With a temperature higher than this, it is better not to wait.
