- White wines before rosés then the reds.
- The lighter wines then the more robust.
- The younger wines then the older ones.
- Finish with the mellow wines.
But as far as the menu is concerned, everything is possible. A ‘Cuvée Athalésie' as an aperitif or with a ‘foie gras' and a chilled white wine with a lemon sorbet can upset the conformity. It is up to you to experiment and enjoy.
