The perfumes emitted by the wine give us precious indications concerning its age, the blend of different grape varieties and the region of origin. For example, one can recognise a white Sauvignon by its floral tones, also those of box-wood and a slight lemony smell, while a ‘muscatel' wine would give off muscat and exotic fruit perfumes. The sense of smell provides us with as much as 70% of the information in wine tasting.
