This vast plateau bordered by the Garonne river in the South and the Dordogne in the North should have been called ‘between two rivers'. Subtly, Latin gave this area its name, ‘inter duo maria' meaning between two rivers inundated by a tidal flow from the Atlantic. Bec d'Ambes, Ste Foy la Grande and La Réole mark the outer points of a large triangular limestone plateau on which, since antiquity, vineyards have flourished. The mosaic of ground of this plateau, although hardly ever higher than 100 metres in altitude, is nevertheless referred to as the high country of the Bordeaux region.
The cooks and producers of Entre-Deux-Mers take particular care in the confection of a cuisine, rich in culinary variety and faithful to their territory. Try a mushroom (botelus) omelette in the mushroom season or a Bordeaux entrecote steak and why not a fried foie gras or an ‘alose' with green sauce.. . . all these are made with local products available on the markets or on sale from the producers.
