It is now the season, a foretaste of your barbecues.
In the vineyards the pruning is well advanced. It is now the time to pull out the canes which have been cut from the vines. These will be crushed to give nourishment back to the earth.
Within the framework of sustainable development these canes are also harvested and used for heating in wood burners in certain Bordeaux châteaux.
But for gourmets, there is also quite a different use and one just as worthy: to feed the fires of their barbecues. These vine canes (sarments) gives an inimitable taste to the entrecote steak know as ‘entrecôte Bordelaise’ also to boletus mushrooms and to many other foods.
If you are one of these gourmets, it is time for you to make your bundle of canes (sarments). It will be with great pleasure that the vine growers will open the doors of their wine properties to you.
Soon on this website – Cave de Sauveterre - you will find a bundle of recipes, things to be grilled on vine twigs (sarments).
